  2. 1 cebolla
  3. 1 zanahoria
  4. 100 gr soja verde (opcional) o cualquier verdurita

  8. 150 ml vino blanco seco
  9. 1 cdta. pimentón de La Vera dulce o picante, al gusto
  10. Aceite de oliva virgen extra
  11. Hierbas aromáticas, Tomillo, Romero, Orégano
  12. 1 hoja laurel
  13. Sal
  14. Pimienta negra recién molida
  15. 1 ramita apio
  16. Caldo de verduras o de pollo

  1. La Noche anterior ponemos la soja verde en agua. Al día siguiente enjuagamos y escurrimos. En una olla con agua y un poco de sal ponemos a cocer la soja, aproximadamente unos 25-30 minutos a fuego medio. Escurrimos y reservamos. Ponemos una cazuela al fuego con un fondo de AOVE, cuando esté caliente doramos la carne por todos sus lados removiendo para que se haga por igual pero que no se cueza.
  2. En esa grasa (añadimos un poco más de aceite si fuera necesario) rehogamos la cebolla y ajos picados con el pimiento troceado y la hoja de laurel. Ponemos también la zanahoria en rodajas y el apio picado. Cuando esté pochada la verdurita añadimos el pimentón, damos unas vueltas con cuidado que no se queme, y volvemos a poner la carne. Añadimos las hierbas y el vino, removemos y dejamos que evapore el alcohol.
  3. Hacemos el guiso añadiendo un vaso de caldo de verduras hasta que la carne esté tierna. Añadimos las patatas cascadas, y el perejil picado, movemos la cazuela en vaivén para que las patatas no se deshagan y su almidón engorde la salsa.
  4. Cuando estén tiernas las patatas añadimos la soja verde cocida, meneamos la cazuela y retiramos del fuego. Rectificamos de sal y pimienta negra molida si hiciera falta y dejamos reposar 10 minutos para que se asiente el guiso antes de servir. ¡buen provecho!
