- Calentamos la paella con un buen chorro de aceite de oliva, y cocinamos las longanizas hasta que estén doradas. Las ponemos en la parte externa del paellero y en el centro metemos los vegetales con un poquito de sal. Cocinamos hasta que transparenten y mezclamos con las longanizas, cocinamos todo junto.



- Echamos el agua, un pelín de colorante, una cucharada de sal. Ponemos a hervir y dejamos hacerse un caldo durante 20 minutos. Echamos el arroz y lo repartimos bien en todo el fondo de la paella. Dejamos que se consuma el caldo cocinando el arroz primero 9 minutos a fuego fuerte, y después unos 10 (no llega) a fuego medio.
